Mayonnaise as a basis (Coctailsauce, Remouladensauce…)
Coctailsauce:
Mayonnaise with 1 Teel. ketchup, 1 Teel. cognac, some Tabasco and 1 spoonful. stir whipped cream, salt and sugar to taste.
Remouladensauce:
1 finely diced pickled cucumber, 1 / 2 Teel. small capers, 1 finely chopped anchovy and wish finely chopped herbs (parsley, tarragon, chervil, dill) under the mayonnaise. With Sen, salt and pepper to taste.
Garlic mayonnaise:
1 clove of garlic with a little salt in a mortar fine crushing it, the mayonnaise and stir with a little lemon juice from taste.
